𝐋𝐞 𝐨𝐫𝐢𝐠𝐢𝐧𝐢 𝐝𝐢 𝐪𝐮𝐞𝐬𝐭𝐨 𝐝𝐨𝐥𝐜𝐞 are ancient and the name "real" attributed to the almond paste seems to be due to the fact that it was, for goodness and sweetness, "worthy of a king". Among the most requested and beloved preparations of this "pasta worthy of a king", there are certainly the biscuits or pastries of almond and fruit martorana or marzipan.⁣

📖Almond pastes are biscuits (or if you prefer pastries) with a 𝐜𝐨𝐧𝐬𝐢𝐬𝐭𝐞𝐧𝐳𝐚 𝐮𝐧𝐢𝐜𝐚 𝐞 𝐩𝐚𝐫𝐭𝐢𝐜𝐨𝐥𝐚𝐫𝐞. Soft and moist inside and crunchy outside, almond pastes are a hymn to simplicity and taste. Once you have obtained and flavored the dough this is modeled in the most diverse formats giving life to a show of shapes and colors.
