🖋️ Hedgehogs or Moor's Heads
The teste di moro are traditional Neapolitan sweets, they are soft domes of sponge cake flavored with liqueur , filled with chocolate cream and covered with flakes usually dark chocolate, before Frank exaggerated with his imagination! In fact, our genius has increased the goodness of this dessert with pistachio, hazelnut, coconut and bueno variations. The classic dessert at the end of a meal, also perfect in the mignon version typical of the pastry shop

✍️ Historical notes
We do not know the pastry genius who invented the testa di moro alias "Ricci", which nevertheless remains the symbol of a Naples that has welcomed and incorporated different cultures, especially culinary ones, improving them and obtaining praiseworthy results. The name of these sweets, instead, is inspired by the physical resemblances of the Spanish Muslims or the inhabitants of Turkey who populated the land of Partenope. The dark color of their skin and their hair gave life to this extraordinary pastry covered with chocolate sprinkles that recall the shaggy hairstyle of this ethnic group. Other testa di moro, of a different nature, however, we also find them here, in Sicily. But these are particular and artistic handicraft products, ceramic or terracotta vases that recall the appearance of the people from North Africa who populated the southern coasts of our country.

😋 Frank's Hedgehogs
Our Frank proceeds with the preparation of the sponge cake . He whips the fresh egg yolks from his farm with icing sugar in a bowl, and the egg whites until stiff in another, adding a pinch of salt. Then he adds the starch and flour to the yolks, taking care to sift them carefully first, and then the sachet of vanilla. He melts the chocolate in a bain-marie with the butter and a few drops of cream to obtain a suitably smooth mixture. He hollows out the inside with a spoon and moistens with the syrup, adding the chocolate cream and closing with the wet sponge cake base. He covers with more cream and delicious chocolate sprinkles. All done, the Moor's heads are ready to be enjoyed by all pastry lovers.
