🖋️ Sicilian pastry art
The artisanal Rame di Napoli are typical Sicilian pastries, particularly from the city of Catania, the Rame di Napoli are prepared with a dough made from flour, sugar, butter and bitter cocoa, the sweets are then glazed with chocolate and covered with pistachio grains.
The original recipe calls for the addition of orange marmalade into the dough. I added it before moving on to the chocolate coating, but there is also a variant that calls for a layer of Nutella.

✍️ Historical notes
These sweets are traditionally prepared in Sicily for All Saints' Day and given to good children as a gift from deceased relatives.
I know, you are wondering why they are typical sweets from Catania if they are then called "from Naples "! We have three hypotheses to explain the matter : the first is that the inventor of the recipe was a pastry chef from Naples; the second says that it was a tribute from Sicily to the city of Naples (during the Kingdom of the Two Sicilies); finally the third hypothesis, which seems to be the most popular, claims that the copper coins of Naples were created after the introduction of a new currency, forged in copper, introduced with the union of the kingdom of Naples and that of Sicily.

😋 Frank's Ramets
Frank prepares cookies with a slightly crunchy outside and soft inside texture. Very fragrant and spicy, in addition to flour, the dough for these sweets includes sugar, bitter cocoa and butter flavored with clove powder, honey, cinnamon, jam and grated orange peel. Finally, a generous covering with dark chocolate icing and a garnish with chopped pistachios.
Frank's exuberant imagination has gradually enriched these sweets with numerous variations. One of these requires that the surface of the biscuit, before being glazed, is spread with Orange Marmalade or Nutella. Another requires that pieces of candied fruit or raisins are added directly to the dough. There is also a white version that sees the filling with pistachio cream without forgetting the latest novelty, the Bueno!
